Chicken dum biryani is an exotic one-dish meal. It is a hot and spicy biryani which is an amalgamation of Bengali and Hyderabadi cuisine. The way of using spices in this biryani has come from Hyderabadi cuisine and addition of egg, potato and essence are the style of Kolkata biryani. I'm sure that you will love this recipe.

Cinnamon    2" sticks

Cardamom    4
Nutmeg: 1
Mace: 1
kebab chini: 8
black peppercorn: 10
Salt     to taste
To Marinate

Chicken    1 kg
Ginger Garlic Paste    1/4 tsp
Yogurt/Curd      1 tbsp
Chilli powder    1 tsp
Coriander powder    1 tsp
Garam Masala Powder   1/4 tsp
Salt    1/2 tsp
To Temper

Oil      3 tbsp
Clove    4 no.s
Cinnamon    2" stick
Bay leaf    1 small
Cardamom    3 no.s
