Here on island we opened so many coconuts. Those which you buy already peeled, are easier to open, have the sweetest water inside and very soft fat, like a jelly. If you wait for coconut to mature, the fat grows double size, very thick and hard, which are used for coconut milk, oil and flour. We prefer water and soft fat, what about you?
