Preheat your oven to 350 degrees and line a baking tray with aluminum foil.
Cut of the ends of your zucchini then slice them into quarters. Arrange evenly on the tray, drizzle with olive oil, and season with salt and pepper. Add your parmesan cheese then bake for 12-14 minutes then broil for 2 minutes.
