Chive Blossom Poppy Seed Dressing
3/4 cup rice vinegar or apple cider vinegar
1/2 cup avocado oil
1/2 cup olive oil
3/4 cup honey
2 tsp Dijon mustard
2 tsp poppy seeds
1 tsp pink Himalayan salt
1/3 cup chive blossom petals
Place all ingredients in a quart canning jar and mix well with an immersion blender. Refrigerate until cold to allow flavors to blend.
This dressing just might become a staple in your pantry and help your family enjoy more salads. The options are only limited by your level of bravery and creativity.
Try using all kinds of greens including spinach, arugula, Swiss chard, kale, mustard greens, lettuce … any variety that makes you happy. Fruits might include blueberries, strawberries, blackberries, honeyberries, apples, and craisins just to get started. Add other veggies like peppers, cucumbers, shredded carrots, and don't forget mushrooms. Proteins can include chicken, cheeses, bacon, and even black beans. Enjoy!
