Freeze-dried bananas make a delicious snack but they also reconstitute to almost their original taste and texture for baking. I'm amazed that these bananas can be shelf-stable for over 20 years. YUM!

Ben's Banana Muffins

1/3 cup melted coconut oil
1/2 cup honey
2 eggs
1 cup reconstituted bananas
1/4 cup almond milk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 3/4 cups whole wheat flour
1/3 cup rolled oats (plus more for the top)

Combine oil and honey. Add eggs and mix. Beat in mashed bananas and milk. Then add all remaining ingredients. Pour into lined muffin pans and sprinkle with rolled oats. Bake at 325 degrees for 22 to 25 minutes. I like to add chocolate chips.
