Don't let the cost of Chinese takeout stop you from enjoying some sweet and sour chicken over rice. You can make this inexpensive homemade version of sweet and sour chicken over rice in less time than it takes you to drive to the restaurant. Best of all, it costs less than $2 a serving.

Most take-out sweet and sour sauce is sugar, vinegar, and cornstarch with food coloring. This is the typical sweet and sour sauce recipe.

1 1/4 cups water
1/2 cup white vinegar
1 cup sugar
1/4 cup corn starch
a few drops red food coloring

Sweet and Sour Chicken Over Rice

1 can chicken or canned ham
3 cups white rice
6 cups hot water
1 teaspoon salt
1/2 cup brown sugar or honey
3 tablespoons cornstarch
1 cup chicken broth or water
1/2 teaspoon salt
3 tablespoons vinegar
1 tablespoon soy sauce
2 tablespoons ketchup
pinch of crushed red pepper
1/4 cup sweet peppers (fresh, dried, or freeze-dried)
1 can pineapple tidbits (juice reserved)
