Frugal Friendly Foods: Rosemary Reeve Demonstrates Her Recipe for Chile Relleno Crepes

Chile Rellenos Crepes is a great way to take basic ingredients and turn them into a budget-friendly gourmet meal for about $1.25 a serving. If you grow your own garden with peppers and tomatoes along with eggs from your own chickens, this recipe is incredibly inexpensive.

Chile Rellenos Creps

**Mexican Sauce Recipe
1 Tbsp. vegetable oil
2 Tbsp. minced onion
1 small garlic clove, minced
1 tsp. cumin
1/8 tsp. cayenne pepper
1 qt. home-canned tomatoes or 1 (14.5 oz.) cans commercially canned tomatoes
1 8-oz can tomato sauce
1 tsp dried oregano

**Crepes
2 eggs
1/2 cup milk
1/4 cup flour
Vegetable oil

**Filling
2 large Anaheim chilies or 1 4-oz. can green chiles, rinsed, seeded, and cut into strips
1/4 onion, minced
4 ounces Monterey Jack cheese (2 ounces cut in long, thin rectangles and 2 ounces shredded)
Shredded cheddar cheese

**Optional garnishes
Sour cream
Cilantro
Chopped green onions
Shredded lettuce
