INGREDIENTS :

400 grams chopped cauliflower ( 14.1 oz )
190 grams chopped potatoes ( 6.7 oz )
40 grams butter ( 1.41 oz )
65 grams chopped onion ( 2.29 oz )
150 ml heavy cream ( 5.07 fl oz )
500 ml milk ( 16.9 fl oz )
1 litre vegetable stock ( 33.81 fl oz )
1 minced garlic clove
1/2 teaspoon salt ( 1.14 grams )
1/2 teaspoon ground black pepper ( 1.16 grams )
1/4 teaspoon cayenne ( 0.45 grams )

INSTRUCTIONS :

.in a large pot / wok on medium heat add 40 grams butter
.once melted add 65 grams chopped onion & cook for 1 to 2 minutes
.add 1 minced garlic clove & cook for 1 to 2 minutes
.add 400 grams chopped cauliflower, 190 grams chopped potatoes
.mix well & cover with lid
.cook for 10 minutes, stir occasionally
.add 1 litre vegetable stock & bring to the boil
.add 1/2 teaspoon ground black pepper, 1/2 teaspoon salt
.add 1/4 teaspoon cayenne & mix well
.add 500 ml milk & mix well
.continue cooking until vegetables are soft
.add 150 ml heavy cream, mix well & cook for 3 to 5 minutes
.blitz until smooth creamy consistency
