The state of Rio Grande do Norte is known for its delicious and diverse cuisine, with European, African and indigenous influences.
Some of the most famous typical dishes of the region include:
Baião de Dois: a dish made with rice, beans, curd cheese and sun meat.
Paçoca de Carne de Sol: a kind of farofa made with cassava flour and pieces of shredded carne de sol, seasoned with onions, garlic, coriander and chives.
Ginga with Tapioca: a dish made with manjuba fish (also known as ginga) and cassava gum.
Escondidinho de Carne Seca: a mixture of cassava puree (also called macaxeira in the region) and matured meat (the famous jerky), assembled with cheese or curd cheese on a platter and gratinated in the oven.
Crab: a dish made with crab, which can be consumed alone or accompanied by pirão, or portion of rice.
Shrimp Bobó: a delicious northeastern dish made with seafood. The Bobo is super creamy and tempting.
Creamy green beans: also known as string beans or string beans, the delicacy can be accompanied by Sun meat. For unsurpassed creaminess, add fresh cream, curd cheese or sour cream.
Mutton: it can be prepared in many ways: on coals, roasted and other ways. For barbecue fans, mutton can be left to marinate in white wine overnight.
Potiguar couscous: similar to a cake made with corn flocked dough. It is rich in nutritional value and can be combined with various fillings, from dried meat to sausage, stewed chicken (stew) and goat in sauce.
Rio Grande do Norte is also known for its delicious desserts. Some of the typical desserts in the area include:
Mugunzá: it is a sweet delicacy made from lightly crushed white or yellow corn kernels, cooked in a broth containing coconut or cow's milk, sugar, ground cinnamon or bark and cloves.
Açaà with granola, confetti, gummy candy, fruit and condensed milk.
Black and white Cocada: White cocada is made with regular sugar and has a milder flavor, while black cocada uses caramelized sugar, which gives a more intense flavor and dark color.
Tapioca ice cream: it is made with granulated tapioca, coconut milk, sugar, condensed milk and sour cream.
Lemon or passion fruit Mousse: it is made with condensed milk, sour cream and concentrated lemon or passion fruit juice, it is a great option for those who want a quick and refreshing dessert.
Paçoquinha: it is a traditional Brazilian sweet made from peanuts, sugar and salt.
Rapadura: made from sugar cane, honey and dulce de leche.
Macaxeira cake: it is a dense and moist cake, made with fresh macaxeira and coconut, it includes ingredients such as sugar, eggs, butter or margarine, coconut milk and grated coconut.
