✨BEEF ARAYES & SPICY POTATOES✨

Sooo happy with how these turned out!! The taste was unreal, pleaseee give them a try🫶🏼

I started off by boiling some peeled and cubed potatoes in salted water and letting them air dry and get colder on a rack while I worked on the ground beef marinade.

Sautéed some onion, garlic, chili flakes, coriander seeds, turmeric, cumin and paprika, which I added to the ground beef with some salt, pepper, finely chopped parsley, cilantro, mint, preserved lemon and roma tomatoes; I used some white wine to deglaze the pan.

Let it all sit together for a while so all those flavours get to know each other🔥

For the spicy potatoes (balata harra) I sautéed some garlic in olive oil and added coriander seeds, chili flakes, turmeric, smoked paprika and cumin, and tossed in the air-dried potatoes.
Having them air-dry will make them absorb better all the spices in the pan; squeeze in some lime juice and toss some chopped cilantro, dill and parsley in.

To assemble the arayes, typically you’d stuff the pita with your meat mixture, but my pitas were all stuck together so I improvised and simply folded them, I guess taco style? Idk, but it’s a good excuse to make them again because flavourwise it was the bomb dot com🤤

Pan sear on each side in olive oil and assemble your sauwce; I went for @hellmannsmayonnaise , @conorsclassyhot , lime juice and some fresh black pepper.
