Ingredients:

1 kilogram of meat (preferably lamb or beef)
2 medium-sized onions, finely chopped
3 cloves of garlic, minced
2 tablespoons of olive oil
1 teaspoon of ground ginger
1 teaspoon of turmeric
1 teaspoon of ground red pepper
1 teaspoon of ground cumin
Salt and pepper to taste
4 potatoes, cut into medium-sized pieces
2 tomatoes, chopped
Chopped parsley for garnish
Preparation:

Heat the olive oil in a large pot over medium heat.
Add the chopped onions and minced garlic to the oil and sauté until golden.
Add the diced meat to the pot and stir until it changes color to brown.
Add the ground ginger, turmeric, ground red pepper, cumin, salt, and pepper. Stir the ingredients well to combine.
Pour hot water into the pot, enough to cover the meat completely, and let it simmer.
Stir the meat occasionally and let it cook over low heat for about one and a half to two hours, or until the meat becomes tender and fully cooked.
Add the potato pieces and chopped tomatoes to the pot and let them cook along with the meat until they are done.
When serving, place the meat and potatoes in a serving dish and garnish with chopped parsley.
Serve the Moroccan-style meat dish hot, alongside bread or cooked rice. You can also serve salads or soup as side dishes to add extra flavor and variety. Enjoy your meal!
