Ingredients:
500 grams of beef, cut into small cubes
100 grams of beef offal (intestines, tripe, or tendon), cleaned
2 bay leaves
2 stalks of lemongrass, bruised the white part
2 cm ginger

For the spice paste:
5 shallots
4 cloves of garlic
3 candlenuts
2 teaspoons of coriander seeds
1 teaspoon of cumin seeds
1 teaspoon of fennel seeds
1 teaspoon of turmeric powder
1 teaspoon of salt

For the broth:
1 liter of water
2 tablespoons of cooking oil
Salt to taste
2 teaspoons of beef broth powder

For serving:
Rice cake (ketupat)
Fried shallots
Chopped spring onions
Lime wedges
Sweet soy sauce (kecap manis)
Chili sauce

Instructions:
Prepare the spice paste by grinding shallots, garlic,candlenuts, coriander seeds, cumin seeds, fennel seeds,turmeric powder, and salt into a smooth paste using a mortar and pestle or a food processor.
Heat the cooking oil in a large pot over medium heat.Sauté the spice paste, bay leaves, and lemongrass until fragrant.
Add the beef and beef offal to the pot and cook until they change color.
Add the ginger and water to the pot. Bring to a boil and then reduce the heat to a simmer. Cook for about 2-3 hours or until the meat is tender.
Season the broth with salt and beef broth powder according to your taste.
Remove the beef and beef offal from the pot and shred them into smaller pieces.
To serve, place the shredded beef and beef offal in a bowl, then pour the hot broth over it. Garnish with fried shallots, chopped spring onions, and a squeeze of lime juice. Serve with rice cake, sweet soy sauce, and chili sauce on the side.
