Meals from the Garden - Black Bean and Corn Salsa

A quick trip to the garden makes for a quick evening meal. Garden Salad with Feta Cheese and Italian Dressing. Cajun Shrimp made in the Air Fryer. Black Bean Salsa with Corn, Peaches, Parsley, Cilantro and Chives.

Recipe
Black Bean Salsa

2 cans of black beans drained and rinsed
2 large mangoes peeled and chopped or 2 cans of chopped peaches
2 cans corn
¼-½ cup chopped cilantro
2 tablespoons chopped chives
1 med red onion
4 tablespoons olive oil
3 tablespoon lime juice
salt and pepper to taste
1 teaspoon ground cumin
1 teaspoon chili powder
Optional - chopped jalapeno to taste
