Sheet Pan Pesto Chicken and Veggies

This is a real easy dinner to throw together and it is really tasty. My husband isn't a pesto fan and he liked this dish. Give it a try. ~ Michele

Ingredients:
1 lb boneless chicken breast or thighs, cubed or sliced thin
4 tbsp olive oil, divided
Seasoning mix, 1/2 tsp each:
- paprika
- onion powder
- garlic powder
- salt
- pepper
1/2 cup pesto
4 cups potatoes, diced (additional salt & pepper for potatoes)
1 zucchini or veggies of choice sliced, then halved
optional: 1 cup mozzarella cheese

Preheat oven to 400 degrees. Toss cubed potatoes with 2 TB olive oil and season with salt & pepper. Place on baking sheet and bake for 15 mins. While potatoes are cooking, combine chicken, seasoning mix, remaining 2 tbsp olive oil, and pesto. Toss to coat. Remove potatoes from the oven, toss potatoes and add the chicken to the pan. Return to the oven for an additional 12 minutes. Remove from the oven, toss and add zucchini. Return to oven and bake for 5 mins. Broil for another 3 minutes. Chicken should have an internal temp of 165 degrees. (if using cheese, remove from the oven and sprinkle with mozzarella cheese).
