Indian Style Shahi Veg Pulav Recipe

A recipe for Shahi Veg Pulav:
Ingredients:
2 cups basmati rice, rinsed and drained
1 tablespoon ghee or vegetable oil
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1 bay leaf
1 inch piece of cinnamon stick
4 cloves
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/4 teaspoon red chili powder
Salt to taste
1 cup vegetables, chopped (carrots, peas, green beans, etc.)
1/2 cup chopped cilantro
Instructions:
Heat the ghee or oil in a large pot or Dutch oven over medium heat. Add the cumin seeds and mustard seeds and cook until they start to pop.
Add the bay leaf, cinnamon stick, cloves, turmeric powder, coriander powder, garam masala powder, red chili powder, and salt. Cook for a minute, stirring constantly.
Add the vegetables and cook for 5-7 minutes, or until they are softened.
Add the rice and stir to coat with the spices.
Add 2 cups of water or vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through and the liquid is absorbed.
Garnish with cilantro and serve hot.
Tips:
For a richer flavor, you can use saffron instead of turmeric powder.
If you don't have vegetable broth, you can use water. Just add a pinch of salt to the water.
To make the rice extra fluffy, you can rinse it in cold water 3-4 times before cooking it.
You can also add other vegetables to the pulav, such as potatoes, cauliflower, or mushrooms.
