Indian Vegetarian Recipe Kashmiri Dum Aloo Shahi Potato Curry Recipe
Ingredients- Boiled potatoes 250g Dahi 3.5 cup Kashmiri Red Whole Chili 5-6 Ginger 1/2 tsp Cumin 1 tsp Bay leaves 2 Clove 3-4 Black pepper 2-3 Cinnamon Fennel seeds 1/2 tsp Garam masala 1/2 tsp Degi mirch 1/2 tsp coriander powder 1/2tsp Oil 2 tsp Process:- Boil the baby potatoes and let the cool completely. Prick the potatoes from all sides using a fork. Deep- fry the potatoes in oil till its golden brown. In a separate bowl, add water and mix in Kashmiri red chilli (seed less) and soak them for 30 min. After 30 min grand chillies into paste. Add this into 3.5 cup of dahi (room temperature) and set aside till in use. For the curry, heat 2tsp oil in a pan, add spices and roast them on low to medium flame. Add dahi mix, stir it continuously until starts boiling (don't skip stirring). when start boiling add salt to taste, garam masala and add potatoes. Let the gravy simmer for 12-15 min. Garnish with coriander and serve hot with choice of bread.
