A recipe for making spicy red peanut chutney:

Ingredients:

1 cup peanuts
1/2 cup water
1/2 cup chopped onions
2-3 garlic cloves, minced
1-2 red chilies, seeded and chopped
1 tablespoon ginger, grated
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1/4 cup cilantro, chopped
Instructions:

Heat a pan over medium heat and add the peanuts.
Roast the peanuts for 5-7 minutes, or until they are golden brown and fragrant.
Remove the peanuts from the pan and let them cool.
In the same pan, heat the water.
Add the onions and cook for 3-5 minutes, or until they are soft and translucent.
Add the garlic, chilies, ginger, coriander powder, cumin powder, turmeric powder, and salt.
Cook for 1-2 minutes, or until the spices are fragrant.
Add the peanuts and cilantro.
Mash the ingredients together with a fork or potato masher until they are smooth.
Serve the chutney hot or cold with idli, dosa, or other South Indian dishes.
Tips:

For a spicier chutney, add more chilies.
For a smoother chutney, you can puree the ingredients in a blender or food processor.
You can also add other ingredients to the chutney, such as tomatoes, lemon juice, or yogurt.
The chutney will keep for up to 3 days in an airtight container in the refrigerator.
