A recipe for making soft Motichoor Ladoo:

Ingredients:

1 cup motichoor boondi
1 cup sugar
1/2 cup water
1/2 teaspoon cardamom powder
Ghee, for greasing your hands
Instructions:

In a large saucepan, combine the sugar and water.
Bring the mixture to a boil over medium heat, stirring constantly.
Once the sugar has dissolved, reduce the heat to low and simmer for 10 minutes, or until the syrup reaches a thread consistency.
Remove the syrup from the heat and add the motichoor boondi.
Stir gently until the boondi is coated in the syrup.
Add the cardamom powder and stir to combine.
Let the mixture cool slightly.
Once the mixture is cool enough to handle, grease your hands with ghee.
Take a small handful of the mixture and roll it into a ball.
Repeat steps 8-9 with the remaining mixture.
Once all of the ladoos have been formed, place them in an airtight container and store them in a cool, dry place.
Tips:

For a richer flavor, you can add 1/4 cup of khoya to the syrup.
If you don't have motichoor boondi, you can use any type of small, round lentil or bean fritters.
Be careful not to overcook the syrup, or it will become too hard.
The ladoos will keep for up to a week in an airtight container.

Use a fine-mesh sieve to drain the boondi after frying. This will help to remove any excess oil and make the ladoos lighter and fluffier.
