Yummy, fast and easy meal. You can play around with the combination of ingredients, sub different vegetables. Really good with roasted veggies.

Recipe: California Bowl

Rotisserie chicken
Zucchini
Grape tomatoes
Vegetable oil
Salt and pepper
Caesar dressing
Guacamole
Rice

Make rice as per package instructions. Half or quarterer the tomatoes, set aside. Cut chicken into 1/2 inch cubes, set aside, toss with desired amount of dressing . Quarter zucchini then slice into 1/2 inch slices. Heat a fry pan on med high heat and add oil. When hot add zucchini and sautee until golden brown season to taste with salt and pepper. Once done start to assemble bowl. Add rice then chicken, tomatoes, zucchini and guacamole. Enjoy!
