NH Homestead Maple Syrup Part 4: Finishing Sap

So, after hauling buckets of sap from our tapped trees, dealing with evaporators that don't want to stay lit, and suffering through one of the coldest, windiest days I've ever chosen to stand outside for, we finally come to the end of our first sap run here in New Hampshire.

The trees will often go through multiple sap runs each spring, with each tree giving up at least a gallon of sap on each run. After boiling it all down, we were finally able to reap the rewards of our hard work and taste some sap.

This first run is nice and light in color and taste. The following runs will bring darker and darker syrup until, eventually, the buds come out on the trees and the sap takes on a funny taste, no longer suitable to make syrup with.
