To make your mouth water... duck breast, asparagus, and it's pure bliss! β¨ πRECIPEπGZFoodqood
INGREDIENTS:
1 duck breast
Thyme, to taste
2 garlic cloves
1 tablespoon butter (for the second cooking)
Rosemary
Star anise
2 orange juice
1 tablespoon honey
1 tablespoon demi-glace
METHOD:
Clean the duck breast and make diagonal cuts on the skin on both sides. Vacuum seal it for the first cooking along with thyme and garlic, and cook it at 54Β°C (130Β°F) using a sous vide machine for 1 hour.
Once ready, proceed with the second cooking in a pan: sear the breast to give it the right crispiness, glaze it with butter and add rosemary and star anise to give it a touch of aroma. In the same pan, add honey, orange juice, and demi-glace, and let the sauce reduce. Clean the asparagus and sautΓ© them in the pan with a knob of butter. Serve!
