Zubriyan Mandi is a delicious and traditional dish from Yemen. Here is a recipe to make it at home:

Ingredients:

For the rice:

2 cups basmati rice, rinsed and drained
4 cups water
2 tablespoons ghee or clarified butter
1 cinnamon stick
3-4 cardamom pods
3-4 cloves
Salt to taste
For the chicken:

1 whole chicken, cut into pieces
1 tablespoon ginger-garlic paste
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon black pepper powder
1/4 teaspoon cinnamon powder
Salt to taste
2 tablespoons oil
2 onions, chopped
2 tomatoes, chopped
2 green chilies, chopped
2 cups water
1/4 cup chopped cilantro
Instructions:

Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.

In a large pot, heat ghee over medium-high heat. Add cinnamon, cardamom, and cloves and sauté for a few seconds until fragrant.

Add the drained rice and salt to the pot and stir to coat the rice with the spices. Add 4 cups of water and bring it to a boil. Reduce the heat to low, cover the pot with a lid, and simmer for 15-20 minutes until the rice is cooked through.

In a separate pot, heat oil over medium-high heat. Add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste, cumin powder, coriander powder, turmeric powder, black pepper powder, and cinnamon powder to the pot and stir for 1-2 minutes.

Add chopped tomatoes and green chilies to the pot and cook until the tomatoes are softened.

Add chicken pieces to the pot and cook until they are browned on all sides.

Add 2 cups of water to the pot, cover with a lid, and cook for 30-40 minutes until the chicken is cooked through.

Once the chicken is cooked, remove it from the pot and keep it aside. Allow the remaining liquid in the pot to reduce to a thick gravy.

Serve the chicken with the rice, drizzled with the thick gravy on top. Garnish with chopped cilantro and enjoy your delicious Zubriyan Mandi!
