Required conditions for Noble Rot? 🍯🍇

Why do some grapes go through noble rot and produce fantastic nectar-like sweet wines but others just rot and go bad?

Well, there are multiple very specific conditions that have to meet to achieve noble rot, this is why it is so limited.

First, we need misty and wet mornings for the spores of the Botrytis Cinerea fungi to germinate.
Second, we need warm and dry afternoons. If the afternoons are not dry enough it can turn into gray rot and destroy the whole production.
Third, thicker-skinned grape varieties are more likely to go through noble rot, without deteriorating.
Fourth. We also need a reasonably high acidity that can balance the sugar level of the concentrated grapes.
And lastly, we need prudent viticultural practices to harvest these precious grapes.

There are only a handful of places on Earth that have all of the infinity stones, Like Tokaj, Hungary, or Sauternes France. Both are placed between the intersection of two rivers, both close to the 45th parallel and both use similar grape varieties susceptible to Noble Rot.
