Harvesting potatoes is the first step. After that, it's time to cure potatoes and store potatoes for as long as possible. We store potatoes on our porch in boxes covered with sheets, after curing potatoes to ensure they aren't going to rot. Today we have Adirondack Blue, Red Pontiac and Yukon Gold potatoes curing on the porch, and it's a beautiful day to dig, dig, diggity dig potatoes.
