Ingredients:

2 cups basmati rice
1 kg chicken, cut into pieces
1 large onion, thinly sliced
4 cloves of garlic, minced
1-inch piece of ginger, grated
2 green chilies, slit lengthwise
1/2 cup plain yogurt
2 tomatoes, chopped
2 teaspoons biryani masala powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 cup chopped coriander leaves
1/2 cup chopped mint leaves
4 cups water
1/4 cup ghee or vegetable oil
Salt to taste
Saffron strands (optional) soaked in 2 tablespoons of warm milk
Fried onions (optional, for garnish)
Instructions:

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat ghee or oil in a large, heavy-bottomed pan over medium heat. Add the sliced onions and cook until golden brown and crispy. Remove half of the fried onions and set them aside for garnishing.

In the same pan, add the minced garlic, grated ginger, and green chilies. Sauté for a minute until fragrant.

Add the chicken pieces to the pan and cook until they are browned on all sides.

Add the chopped tomatoes and cook until they become soft and mushy.

In a small bowl, whisk together the yogurt, biryani masala powder, turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala. Add this mixture to the chicken in the pan and mix well to coat the chicken pieces.

Stir in the chopped coriander leaves and mint leaves.

Add the soaked and drained basmati rice to the pan and gently mix it with the chicken and spices.

Pour 4 cups of water into the pan. Add salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and cook for about 20-25 minutes, or until the rice is tender and cooked through.

Once the rice is cooked, remove the pan from the heat. Allow the biryani to rest for 5 minutes.

If desired, drizzle the saffron-infused milk over the top of the biryani for added flavor and aroma.

Garnish the biryani with the reserved fried onions.
