Bailey's Chocolate Mousse

Desserts don't get simpler or more delicious than this. The mousse is airy, light, creamy, indulgent and carries the most beautiful notes of Baileys. It hits all the right spots with the Irish cream liqueur {#notsponsored} adding the right sweetness. It's also looks really pretty when piped into a stem glass, one of my favourite ways to serve a mousse.
This is a wonderful make ahead dessert option that tastes as good as it looks, though we can't wait to dive into it the minute it's piped. Bailey's is optional of course. You can add orange zest, vanilla beans or coffee instead if you like. Here's the recipe for you ↓
Bailey's Chocolate Mousse
Makes 2-3 servings
150g whipping cream, chilled
115g 46% couverture chocolate, melted & cooled slightly
20ml Bailey's Irish Cream
Method
Using an electric blender, whip the cream to stiff peaks.
Pour over the melted chocolate and Bailey's Irish Cream. Whip briefly until just mixed in.
Put into a piping bag fitted with an open star piping nozzle and pipe into a stem glass or dessert bowl. Serve immediately for a soft set or place in the fridge for a couple of hours for a firm set.
