In the mountain area south of Taipei city is Shihding Hsu’s Handmade Noodles. Setup by Hsu Jen Ping in this quiet mountain region, he produces a very natural noodle mostly dried in the sun and mountain breeze. Tony Good visits the factory and tries freshly made and cooked noodle dishes.
