Ingredients:

2.2 lbs (1 kg) of yellow-fleshed potatoes
3 tablespoons of olive oil
2 teaspoons of salt
1 teaspoon of ground black pepper
1 teaspoon of sweet paprika (optional)
2 cloves of garlic, finely chopped (optional)
Chopped fresh parsley (optional)

Preheat the oven to 400°F (200°C).
Peel the potatoes and cut them into large cubes.
In a bowl, mix the olive oil, salt, black pepper, paprika, and garlic (if using).
