Ingredients:
- 1 cup sliced eggplant
- 1 cup sliced ampalaya (bitter gourd)
- 1 cup sliced tomato
- 1 cup sliced okra
- 1 cup sliced string beans
- 1 cup sliced squash
- 1/4 cup bagoong (fermented shrimp paste)
- 1/2 cup water
- 2 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons cooking oil
Instructions:
1. In a pan, heat the cooking oil over medium heat. Add the garlic and onion and sauté until the onion becomes translucent.
2. Add the bagoong to the pan and mix it with the sautéed garlic and onion.
3. Add the sliced vegetables to the pan and mix well with the bagoong mixture.
4. Pour in the water and bring to a boil. Cover the pan and reduce the heat to low. Let the vegetables cook for about 10 to 15 minutes or until they are tender.
5. Serve hot with rice.
