Vegan Rendang Recipe Tutorial Video
Ingredients:
500g peeled young jack fruit
130ml coconut milk
250ml water
2 lemon grass
2 salam leaf
3 kafir lime leaf
1 tsp coriander powder
2 tsp mushroom stock
1 cinnamon stick
quarter tsp aromatic ginger powder
2 cloves
1 star anise
1 tsp salt
4 tbs sweet sticky soy sauce
Blended Ingredients:
6 shallots
1 tomato
4 cloves garlic
2 tbs tamarind water
5cm turmeric root
2 slices galangal
2 slices ginger root
5 dried chillies
4 candlenut
Preparation Time: 30 minutes
Cooking Time: 1 hour
Total Time: 1.5 hours
Method:
1. Fry the jack fruit on a low heat until it starts to brown.
2. Blend the ingredients.
3. Put all the ingredients into a warm wok, except for the jack fruit & soy sauce.
4. Once it comes to the boil, add the jack fruit.
5. Stir slowly on a low heat.
6. Then gently simmer for 1 hour.
7. Add the soy sauce towards the end of the cooking time.
All the liquid should evaporate or turn slightly oily, but not become dry.
Storage:
Will keep in the fridge for around 5 days or you can freeze it.
Serving Suggestions:
Makes enough for 4 people. Serve on a bed of rice, or with bread. It can also be used as a burger filling with salad, mushroom, onion, etc....
Rendang is usually made with meat or chicken, but it works really well with jack fruit used as a meat substitute.

500 gram nangka muda kupas
130 ml santan
250ml air
2 serai
2 lembar daun salam
3 lembar daun jeruk purut
1 sdt ketumbar bubuk
2 sdt kaldu jamur
1 batang kayu manis
seperempat sdt kencur bubuk
2 cengkeh
1 bunga lawang
1 sdt garam
4 sdm kecap manis
Bahan Blender:
6 bawang merah
1 tomat
4 siung bawang putih
2 sdm air asam jawa
5 cm kunyit
2 iris lengkuas
2 ruas jahe
5 buah cabai kering
4 kemiri
Waktu Persiapan: 30 menit
Waktu Memasak: 1 jam
Total Waktu: 1,5 jam
Metode:
1. Goreng nangka dengan api kecil hingga mulai kecoklatan lalu tiriskan.
2. Haluskan bahan.
3. Masukkan semua bahan ke dalam wajan hangat, kecuali nangka & kecap manis.
4. Setelah mendidih masukkan nangka.
5. Aduk perlahan dengan api kecil.
6. Kemudian didihkan perlahan selama 1 jam.
7. Tambahkan kecap menjelang akhir waktu memasak.
Semua cairan akan menguap atau menjadi sedikit berminyak, tetapi tidak menjadi kering.
Penyimpanan:
Akan disimpan di lemari es selama sekitar 5 hari atau Anda dapat membekukannya.
Saran Penyajian:
Membuat cukup untuk 4 porsi. Sajikan di atas nasi, atau dengan roti. Dapat juga digunakan sebagai isian burger dengan salad, jamur, bawang, dll....
Rendang biasanya dibuat dengan daging atau ayam, akan tetapi dengan sayur nangka muda tidak kalah enaknya sebagai pengganti daging.
