How to make Delicious Plantains

This is how we like to cook the Plantains...fast, easy and delicious on it's own, with scrambled Eggs or Eggs a la Mexicana for Breakfast.

Plantains
Ingredients:
2 ripe Plantains
1 tbsp Butter
2 heaped tsp Sugar
Cinnamon
Mayonnaise
Dry Cheese, crumbled
Cilantro or Parsley, chopped

Cut off ends of Plantains, slice in half lengthwise and peel.
Melt Butter in med sized Skillet on med/high heat.
Sprinkle with 1 tsp of Sugar and Cinnamon.
Top with halved Plantains, sprinkle with rest of Sugar and Cinnamon.
Sauté until golden, turn over & continue sautéing until golden.
To serve, top Plantains with Mayo and sprinkle with Dry Cheese & Cilantro or Parsley.
