Siam Yellow Medium Hot Sweet Chilli Sauce

4.5kg Chilli
7 litres Apple Cider Vinegar
6.3kg Sugar
1.5 cups ginger
1.5 cups garlic
11 tsp salt

Finely blend chilli, garlic & ginger
Combine ingredients in a pot
Bring to a boil then simmer until desired consistency is achieved.
A thickening agent may be used. Arrowroot recommended but corn flour will suffice although it may give the sauce an opaque / cloudy finish.

"HOT" pack into sterilised bottles, emphasis on hot.
Or:
Water bath in canning jars for 15 minutes.
