Omega3, also polyunsaturated
create molecules that dampen
inflammation
But: flaxseed's omega3 is ALA
[alpha-linolenic acid]
-we cannot convert this into
DHEA & EPA
[the omega3 our body can use]
-our bodies
DO NOT HAVE THE ENZYMES

Omega6: our bodies cannot
burn it for fuel...
-gets into our fat cells
-gets into mitochondria
As we eat more omega6 fats
our fat cells contain more
-from 6% to 23%
Research [C. Knobbe]:
Ancestral diets:
-NO VEGGIE OILS
-omega6 in fat cells: 3.8%
-even our 7% is too high!

Double bonds create oxidation reactions
Exposed to air, becomes oxidized
Generates free radicals
Causes inflammation [burn injury to cell]
Leads to chronic disease
-example macular degeneration
