Spicy Fish Curry Recipe

Ingredients:

500g fish fillets, cut into bite-size pieces
2 tablespoons vegetable oil
1 onion, chopped
3 garlic cloves, minced
2 teaspoons grated ginger
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon turmeric
1 teaspoon red chili powder
2 tomatoes, chopped
1 green chili, sliced
1 tablespoon tomato paste
1 teaspoon salt
1/2 teaspoon sugar
1/2 cup coconut milk
1/2 cup water
1 tablespoon chopped coriander leaves
Directions:

Heat the oil in a large saucepan or Dutch oven over medium heat. Add the onion and cook for 3-4 minutes until softened.

Add the garlic, ginger, cumin seeds, coriander seeds, fennel seeds, turmeric, and red chili powder. Cook for 1-2 minutes until fragrant.

Add the tomatoes and green chili and cook for another 2-3 minutes until the tomatoes have softened.

Add the tomato paste, salt, and sugar and stir to combine. Add the fish pieces and stir gently to coat them in the spice mixture.

Pour in the coconut milk and water, then bring to a simmer. Cook for 10-15 minutes until the fish is cooked through and the sauce has thickened.

Sprinkle with chopped coriander leaves and serve with rice or naan bread.
