Here's a recipe for Mutton Champaran:

Ingredients:

1 kg mutton, cut into small pieces
4-5 onions, finely chopped
2-3 tomatoes, finely chopped
2 tablespoons ginger-garlic paste
1 tablespoon cumin seeds
1 tablespoon coriander powder
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala powder
2-3 bay leaves
Salt, to taste
Oil, for cooking
Fresh coriander leaves, chopped for garnishing
Instructions:

Heat some oil in a pressure cooker and add cumin seeds and bay leaves. Saute for a few seconds until they start to crackle.
Add the chopped onions and saute until they turn golden brown.
Add ginger-garlic paste and saute for a few minutes until the raw smell disappears.
Add the chopped tomatoes and saute until they turn soft and mushy.
Add the coriander powder, red chili powder, turmeric powder, and salt. Mix well and cook for a few minutes.
Add the mutton pieces to the cooker and mix well with the masala.
Add water and pressure cook for 20-25 minutes or until the mutton is cooked and tender.
Once the mutton is cooked, add garam masala powder and mix well. Cook for a few more minutes.
Garnish with fresh coriander leaves and serve hot with rice or roti.
