Mutton Rogan Josh .... Special Recipe
Mutton Rogan Josh is a popular Kashmiri dish that is known for its rich, flavorful and aromatic spices. Here's a special recipe for you to try:
Ingredients:
1 kg bone-in mutton
2 cups chopped onions
1/2 cup cooking oil or ghee
1 tablespoon ginger paste
1 tablespoon garlic paste
2-3 green cardamom pods
2-3 cloves
1 inch cinnamon stick
1 bay leaf
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 teaspoon coriander powder
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
Salt, to taste
2 cups water
Chopped cilantro, for garnish
Instructions:
Heat the oil or ghee in a pressure cooker over medium heat.
Add the cardamom pods, cloves, cinnamon stick, and bay leaf, and stir for a few seconds until fragrant.
Add the chopped onions and sauté until they turn translucent and start to brown.
Add the ginger and garlic paste and sauté for a minute.
Add the mutton pieces to the pressure cooker and stir to coat with the onion mixture.
Add the cumin seeds, fennel seeds, coriander powder, red chili powder, turmeric powder, garam masala powder, and salt, and stir well to combine.
Pour in the water, stir again, and cover the pressure cooker with its lid.
Cook on high pressure for 25-30 minutes, or until the mutton is cooked through and tender.
Let the pressure release naturally, then open the pressure cooker and give the Rogan Josh a good stir.
If the gravy is too thin, cook uncovered for a few minutes until it thickens to your desired consistency.
Garnish with chopped cilantro and serve hot with steamed rice or naan bread.
