Super Bros' Sensational Spinach and Cremini Mushroom Omelette Wrap with Spicy Mayo Sauce
(Yields 2 servings)

Ingredients:

4 large eggs
1/4 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
1 cup fresh spinach, divided
1/4 cup milk
1-2 cloves fresh garlic
1/2 onion, finely chopped
5 cremini mushrooms, sliced
1 Tbsp olive oil or coconut oil
2 spinach wraps

Spicy Mayo Sauce:

2 Tbsp mayonnaise
1 tsp sriracha
1 tsp ketchup
1/4 tsp smoked paprika
Instructions:

In a blender, combine 4 eggs, 1/4 tsp salt, 1/4 tsp pepper, 1/4 tsp cayenne pepper, 1/2 cup spinach, and 1/4 cup milk. Blend until smooth and well combined.

In a cast iron or non-stick pan over medium heat, sauté the onions and garlic until the onions are translucent. Remove from the pan and set aside.

In the same pan, heat the olive oil or coconut oil over medium heat. Ensure the pan is very hot before adding the egg mixture. Pour the egg mixture into the pan and sprinkle the sautéed onions, sliced cremini mushrooms, and remaining spinach evenly on top.

Cover the pan with a tight-fitting lid and cook for 5-7 minutes or until the eggs are golden and cooked through. You can also use two same-sized cast iron pans to flip the omelette without using a spatula. See the Super Bros Cooking Show on YouTube for examples.

While the omelette is cooking, prepare the Spicy Mayo Sauce by combining 2 Tbsp mayonnaise, 1 tsp sriracha, 1 tsp ketchup, and 1/4 tsp smoked paprika in a small bowl. Mix well and set aside.

Once the omelette is cooked, carefully slide it onto a plate. In the meantime, toast the spinach wraps in a pan or directly over the stovetop flame for a few seconds on each side until warmed and slightly charred.

Place the cooked omelette onto the toasted spinach wrap, drizzle with Spicy Mayo Sauce, and roll it up to create your delicious breakfast wrap.
