Strawberry Cheesecake Buns 🍓⁣

Soft buns with cream cheese and strawberry filling, topped with fresh strawberries and a sprinkle of powdered sugar.

Dough:⁣⁣
370 g bread flour⁣⁣
50 g granulated sugar⁣⁣
7 g instant dry yeast ⁣
6 g salt⁣⁣
185 g whole milk⁣
70 g eggs (1 whole egg + 1 yolk)⁣⁣
65 g cubed, softened butter⁣⁣
⁣⁣
Strawberry filling: (makes a little extra, so half the ingredients if you don’t want leftover jam) ⁣
400 g frozen strawberries ⁣⁣
200 g granulated sugar⁣⁣
Lemon juice from 1/2 lemon⁣⁣
⁣⁣
Cream cheese filling:⁣⁣
200 g full-fat cream cheese, room temp⁣⁣
30 g granulated sugar ⁣⁣
½ vanilla bean pod or ½ tsp vanilla paste⁣
⁣⁣
1. Start by preparing the dough:⁣⁣
•Add all ingredients, except butter, to the bowl of a stand mixer fitted with a dough hook. ⁣⁣⁣
•Knead on low-medium for 10 minutes. ⁣⁣⁣
•Add butter in cubes, one cube at a time. ⁣⁣⁣
•Knead for another 10-20 minutes until the dough passes the window-pane test. ⁣⁣⁣
•Place dough in a clean, lightly oiled bowl.⁣
•Cover and proof for 90 minutes or until doubled.⁣
⁣⁣
2. While the dough is proofing, make the strawberry filling:⁣⁣
•Add strawberries, sugar, and lemon to a pot and bring it to a boil. ⁣⁣
•Simmer on medium/low for about 30 minutes or until thick and jam-like. Stir occasionally. ⁣⁣
•Transfer to a bowl, cover, and cool to room temp. ⁣
⁣⁣
3. Once the dough has doubled in size: ⁣⁣
•Divide into 9 equal pieces and roll into balls. ⁣⁣
•Flatten each dough ball slightly and use your fingers to create an indention in the center of each bun. ⁣⁣
•Arrange buns on baking trays, cover, and proof for 30-45 minutes. ⁣⁣
⁣⁣
4. Meanwhile, make the cream cheese filling:⁣⁣
•Combine cream cheese, sugar, and vanilla in a bowl. Store at room temp until you’re ready to fill the buns.⁣
⁣⁣
5. Once the buns have finished proofing:⁣⁣
•Use your fingers to create a larger indention in the center of each bun. ⁣⁣
•Fill centers with cream cheese and strawberry filling. Brush the edges of the bun with egg wash. ⁣
•Bake at 355F/180C for 12-15 minutes. ⁣Transfer to a wire rack and allow to cool for at least 15 mins.⁣
•Sprinkle powdered sugar on top and decorate with fresh strawberries if desired. 🫶
