Ingredients:

1 package of spring roll wrappers
2 cups of cooked vermicelli noodles
1 cup of cooked shrimp, peeled and deveined
1 cup of bean sprouts
1 cup of fresh mint leaves
1/4 cup of chopped peanuts
1/4 cup of hoisin sauce
1/4 cup of water
1 tablespoon of lime juice
1 tablespoon of fish sauce
1 tablespoon of sugar
Salt and pepper to taste
Vegetable oil for frying
Instructions:

In a bowl, mix together the hoisin sauce, water, lime juice, fish sauce, sugar, salt, and pepper to create the dipping sauce.

In another bowl, mix together the cooked vermicelli noodles, shrimp, bean sprouts, chopped peanuts, and fresh mint leaves.

Fill a large bowl with warm water. Dip a spring roll wrapper in the water for a few seconds until it becomes pliable.

Lay the wrapper flat on a clean work surface. Spoon a portion of the noodle mixture onto the bottom third of the wrapper.

Fold the sides of the wrapper over the filling, then roll the wrapper up tightly from the bottom to the top.

Repeat steps 3-5 with the remaining wrappers and filling.

Heat the vegetable oil in a deep frying pan over medium-high heat.

Fry the rolls for 2-3 minutes until they are golden brown and crispy.

Drain the rolls on a paper towel to remove any excess oil.

Serve the rolls with the dipping sauce and enjoy!
