INGREDIENTS :
CINNAMON LAYER
1/3 cup plain flour ( 46 grams )
3/4 cup light brown sugar ( 114 grams )
1 1/2 teaspoons ground cinnamon ( 4 grams )
STREUSEL LAYER
1 cup plain flour ( 137 grams )
1 cup light brown sugar ( 177 grams )
2 teaspoons ground cinnamon ( 6 grams )
1/4 teaspoon salt ( 0.5 grams )
1/2 cup butter ( 100 grams )
CAKE MIX
3 1/2 cup plain flour ( 474 grams )
1 tablespoon baking powder ( 13 grams )
1/4 teaspoon salt ( 0.5 grams )
1 cup butter ( 200 grams )
1 1/2 cup sugar ( 306 grams )
3 medium eggs
3/4 cup milk ( 160 ml )
1 cup sour cream ( 200 ml )
2 teaspoons vanilla extract ( 7 grams )
INSTRUCTIONS :
.in a bowl add 1/3 cup plain flour, 1 1/2 teaspoon ground cinnamon
.add 3/4 cup light brown sugar, mix well & set aside
.in another bowl add 1 cup plain flour, 2 teaspoons ground cinnamon
.add 1 cup light brown sugar, 1/4 teaspoon salt & mix well
.add 1/2 cup butter, work into mix until crumb consistency & set aside
.in a large bowl add 3 1/2 cup plain flour, 1/4 teaspoon salt
.add 1 tablespoon baking powder, mix well & set aside
.in a bowl add 1 cup butter, 1 1/2 cup sugar & mix together
.while mixing add 3 eggs ( 1 at a time )
.add 1 cup sour cream, 2 teaspoons vanilla
.add 3/4 cup milk & mix gently until mixed well
.pour batter into flour mix & fold in until thick smooth consistency
.in a baking dish lined with parchment paper add half of cake batter & spread evenly
.sprinkle on the cinnamon layer mix & spread evenly
.pour in remaining cake batter & spread evenly
.top with the streusel layer & lightly press down
.place in a preheated oven 180 c / 356 f for 60 to 75 minutes ( check with skewer )
.cover with a paper towel & a fabric towel to prevent streusel from hardening
.leave to completely cool before serving
