Here's a recipe for a healthy Spanish omelette:

Ingredients:
- 2 medium potatoes
- 1 onion
- 4 eggs
- 1 red bell pepper
- 1 green bell pepper
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Peel and chop the potatoes into small cubes. Dice the onion and slice the bell peppers into thin slices.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped potatoes, onion, and bell peppers. Stir occasionally and cook for about 10-15 minutes, or until the potatoes are soft and lightly browned.
