Max's Mistake- Passionfruit/Honey/Lemonade Cocktail

For the last video of the Tropical Escape series, we are going to do Max's Mistake. This cocktail is one of the most underrated tiki cocktails in my opinion. But it is also one of the most delicious. I often use this cocktail to introduce people to gin.

Max's Mistake
1oz Lemon Juice
1oz Passionfruit Syrup
.5oz Honey Syrup
2oz London Dry Gin
2oz of Fentimans Dry Lemonade
1 Dash of Angostura Bitters

Add all ingredients into a drink mixer tin with 6-8oz of crushed ice and flash blend for 5 seconds. Roll the contents into a collins glass or brandy snifter.Fill the rest of way with ice. Garnish with a mint spring.

Honey Syrup
Bring one cup of honey to light simmer over medium heat, just enough to make the honey thin in viscosity. Add 1/2 cup of water and whisk vigorously. Remove from heat immediately. Let cool before bottling. Try to use in 2-3 weeks. Sometimes I will infuse the honey with citrus peels and expressed citrus oil to add an essence of fruit to the honey for spring/summer cocktails.
