-Salisbury Steak-

Patties:
2 lbs. 80/20 Ground Beef
2 Tablespoon Beef flour
3 Cloves fresh garlic, minced
1 Tablespoon Dijon mustard
1 Tablespoon Tallow
½ Tsp Garlic powder
½ tsp Onion power

Sauce:
Meat Juices from cooking the patties (KEEP in pan when done browning patties)
1 Tablespoon Butter
3 Tablespoon Beef Flour
4/5 cup heavy cream (I add ½ a cup at first then 1/3 cup later on in the process)
¼ cup Beef stock
2 Tablespoons Sour cream OR cream cheese
Salt and pepper to taste

Instructions:

1. Add all ingredients for patties, mix by hand then pat out.
2. Heat pan to medium heat, add 1 tsp of tallow to pan
3. Brown each side of patties to golden brown
4. Remove patties from pan and set aside
***DO NOT let the fonds (the brown crunchy meat bits in the pan) burn!!***
5. Add butter to the meat drippings in the pan, let melt
6. Add beef flour, stirring well for 1-2 min
7. Add ½ cup heavy cream, mixing well
8. Add ¼ cup beef stock, continue to mix continuously
9. Add last 1/3 cup of heavy cream, mix
10. Allow sauce to reduce for 8-10 minutes
11. Add 2 tablespoon sour cream (OR cream cheese), stir for additional 1-2 minutes to mix well
12. Add salt and pepper to taste
***MAKE sure to taste test!! Adjust to taste**
13. Add patties back into pan, ladling sauce over meat
14. Allow to rest 1-2 min with heat turned to low (leave 5 min if you prefer well cooked meat)
