Potato Burger Buns 🍔

Ingredients ⁣for 9 buns:⁣
⁣⁣
370 bread flour⁣⁣
15 g sugar⁣⁣
8 g instant dry yeast⁣
8 g salt ⁣⁣
140 g milk, room temp⁣⁣
1 large egg, room temp⁣⁣
50 g unsalted butter, softened and cubed⁣⁣
150 g starchy (or all-purpose) potatoes, boiled, cooled, and riced ⁣⁣
⁣⁣
+ 1 egg for egg wash⁣
sesame seeds⁣⁣
⁣⁣
Instructions ⁣⁣
⁣⁣
•Add ingredients, except butter and potatoes, to the bowl of a stand mixer. ⁣⁣
•Turn your mixer on and let the dough come together (the texture will be a little dry at this point). ⁣⁣
•Knead for 5 minutes at medium speed. ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
•Next, with the mixer still on, add cubed, softened butter, one cube at a time. ⁣⁣
•Once all the butter has been added to the dough, add the riced potatoes.⁣⁣
•Knead for 10-15 minutes until the dough passes the window-pane test. ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
•Transfer to a lightly oiled bowl and proof for 90 minutes or until doubled in size. ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
•Divide the dough into 9 x 90 g pieces and roll into tight rounds. ⁣⁣
•Arrange on lined baking trays with 10 cm baking rings (the rings are optional)⁣⁣⁣⁣⁣⁣⁣⁣.⁣⁣
•Cover and proof for about 45 minutes, or until the burger buns look nice and puffy. ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣
•Brush with egg wash, sprinkle on sesame seeds, and bake at 350F/180C for 12-15 minutes. ⁣⁣⁣⁣⁣⁣⁣Cool for at least 10 minutes, and enjoy with whatever you’re grilling
