Double Smoked Chipotle Mango Ham
Double smoked ham is a type of ham that has been smoked twice, giving it a rich, smoky flavor. The ham is first cured and smoked, then smoked again for additional flavor and tenderness.
To make double smoked ham, start with a fully cooked, bone-in ham. Score the surface of the ham with a sharp knife, creating a diamond pattern. This will allow the smoke and seasonings to penetrate the meat. Next, prepare a smoker with wood chips or chunks. Applewood or hickory are popular choices for smoking ham.
Place the ham in the smoker and smoke at a low temperature (around 225°F) for 2-3 hours. Baste the ham with a mixture of apple juice and brown sugar every hour to keep it moist and add flavor. After 2-3 hours, remove the ham from the smoker and let it rest for 15-20 minutes before carving.
Double smoked ham is a delicious and impressive centerpiece for holiday dinners or special occasions. It can be served hot or cold, and is often accompanied by traditional sides like mashed potatoes, green beans, and rolls.
