Ingredients:
- 1 sheet puff pastry, thawed
- 4 hard-boiled eggs, chopped
- 1/4 cup mayonnaise
- 1/4 cup finely chopped onions
- 1/4 cup chopped cilantro
- Salt and pepper, to taste
- 1 egg yolk, whisked with 1 tablespoon milk for egg wash
Instructions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, combine the chopped eggs, mayonnaise, onions, cilantro, salt, and pepper.
3. Roll the puff pastry sheet out to an even thickness and cut into 12 squares. Spoon a tablespoon of the egg mixture onto the center of each square.
4. Fold the corners of the pastry up and over the egg mixture, pinching the edges together to seal. Place the puffs seam-side down on the prepared baking sheet.
5. Brush the puffs with the egg wash.
6. Bake for 15-20 minutes, or until the egg puffs are golden brown and puffed up.
7. Serve the egg puffs warm. Enjoy!
