How To Make Mexican Street Corn Salad (Esquite)

4-5 large ears of fresh corn or 4-5 cups frozen corn (I used Trader Joes Roasted Corn)
2 tbsp unsalted butter
3 tsp minced garlic
salt and pepper to taste
1 tbsp finely minced jalapeno, seeds removed
1 bunch coarsely chopped cilantro or parsley (3/4 cup)
1 bunch thinly sliced green onions (3/4 cup)
1/2 red onion, finely diced (1/3 cup)
Cotija cheese or feta cheese, optional

Dressing
3 tbsp freshly squeezed lime juice
1/4 cup mayo
1/4 cup sour cream
1/2 tsp chili powder
1/4 tsp paprika
1/8 tsp ground cumin
