Dahi Bhalla (also known as Dahi Vada) is a popular Indian snack that is made with deep-fried lentil dumplings that are soaked in a creamy yogurt sauce and topped with various chutneys and spices. Here is a simple recipe for making Dahi Bhalla at home:

Ingredients:

1 cup urad dal (split black lentils)
1/4 cup moong dal (split green gram lentils)
1/2 tsp cumin seeds
Salt, as per taste
Oil, for deep frying
2 cups yogurt (curd)
1/4 cup sugar
1/4 cup tamarind chutney
1/4 cup green chutney
Red chilli powder
Roasted cumin powder
Chaat masala
Chopped coriander leaves, for garnishing
Instructions:

Soak the urad dal and moong dal in water for at least 4 hours or overnight.
Drain the water and grind the soaked dal in a mixer to a fine paste.
Add cumin seeds and salt to the batter and mix well.
Heat oil in a deep frying pan. Wet your hands and take a small portion of the batter and drop it in the hot oil.
Fry the dumplings until they turn golden brown and crispy from all sides. Drain the fried dumplings on a paper towel.
Soak the fried dumplings in lukewarm water for 10-15 minutes. Drain the water and gently press the dumplings to remove any excess water.
Beat the yogurt and sugar together to make a smooth and creamy mixture. Add salt to taste.
Arrange the dumplings on a serving plate and pour the yogurt mixture over them.
Drizzle tamarind chutney and green chutney on top of the yogurt.
Sprinkle red chilli powder, roasted cumin powder, and chaat masala on top.
Garnish with chopped coriander leaves and serve chilled.
