Catfish is a delicious and versatile fish that can be prepared in many ways, including fried, grilled, or baked. Here's a simple and tasty recipe for crispy fried catfish:

Ingredients:
- 4 catfish fillets
- 1 cup of cornmeal
- 1/4 cup of flour
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and black pepper, to taste
- 1/2 cup of buttermilk
- Vegetable oil for frying

Directions:

1. In a bowl, combine the cornmeal, flour, garlic powder, paprika, cayenne pepper, salt, and black pepper.

2. Pour the buttermilk in another bowl.

3. Dip each catfish fillet in the buttermilk and then coat it in the cornmeal mixture.

4. In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.

5. Working in batches, fry the catfish fillets for about 3-4 minutes on each side or until golden brown and cooked through.

6. Remove the catfish from the skillet using a slotted spoon or tongs and place them on a paper towel-lined plate to drain the excess oil.
