Mava, also known as khoya, is a popular dairy product used in many Indian sweets and desserts. It is made by reducing milk until it becomes a solid mass with a rich, creamy texture. Here's how to make it:

Ingredients:

1 liter full-fat milk
Instructions:

Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
Once the milk comes to a boil, reduce the heat to low and let it simmer.
Keep stirring the milk every few minutes to prevent it from sticking to the bottom of the pan and burning.
As the milk reduces, the volume will decrease, and it will become thicker in consistency.
Continue simmering and stirring until the milk reduces to one-third of its original volume.
At this point, the milk will start to change color and thicken even more.
Keep stirring until the milk solids start to come together to form a soft, crumbly mass.
Once you achieve the desired texture, turn off the heat and let the mava cool down completely.
Once the mava is cool, you can use it to make various desserts or store it in an airtight container in the refrigerator for later use.
Note: Be patient when making mava, as it takes time and requires constant stirring to achieve the desired texture. The process can take anywhere from 1 to 2 hours, depending on the quantity of milk you are using and the thickness you desire
